what is EcoRI?How does EcoRI differ from an exonuclease?

Answer:

EcoRI is a restriction endonuclease enzyme isolated from species E. coli. It is a restriction enzyme that cleaves DNA double helices into fragments at specific palindromic sequence.

exonuclease enzymes work by cleaving the nucleotides from the ends of polynucleotide chain whereas EcoRI cleave the polynucleotide chain in the middle specifically in the palindromic sequence.
