they cannot breath underwater like fish can as they do not have gills . They breath through nostrils, called a blowhole , located right on top of their head . This allows them to take breaths by exposing just the top of their heads to the air while they are swimming or resting under the water

Dolphins are mammals, not fish.
Unlike fish, who breathe through gills, dolphins breathe air using lungs. Dolphins must make frequent trips to the surface of the water to catch a breath. The blowhole on top of a dolphin's head acts as a "nose," making it easy for the dolphin to surface for air.
