• Food tastes and preferences keep evolving with changing times. The next generation has different taste preferences than the previous generation. These tastes keep evolving because of the introduction of new trends, techniques, and varieties. Sometimes these tastes are different only for a short while. These temporary changes are caused due to popular trends, like the recent piñata cake. This new cake variety went viral on social media and suddenly every cake vendor started competing amongst themselves over the prices and quality of this cake. Other times, a change is seen in food tastes which are longer and more permanent. This is a generational change. Today  I am going to talk about these evolving food tastes around me.
• After an online survey that I conducted, I drew an interesting conclusion about the different food preferences among different generations. I asked certain relevant questions to some families in my neighborhood and talked to 2-3 different generations.  The difference between 2 consecutive generations is also surprisingly very different. I found out that the first generation is still used to the traditional Indian dishes and cuisine and look for something standard which is not very different from what they have been eating since their childhood and are not very adventures or keen to try new cuisine whereas the a 3 rd. generation or the youngsters are looking for exactly that. They love trying new things and value innovation and the introduction of new trends and varieties. Fusion items are also very popular among the youth nowadays. The youngsters nowadays are looking for a cheap and sustainable avenue for good and delicious food, and street food gives them exactly that. Recently there has been a rise in the popularity of street food and its ever-increasing demand is wholly fulfilled by the numerous street vendors that have emerged in the last few years.
• The second generation has however venintoed for new cuisines and went in for international dishes. This is the reason why foreign food gained popularity in India during the ’80s when our parents were young and classy and were willing to try these. Ahead I shall discuss the recent surge in the popularity of street food which is partly caused due to the rise in social media.
• I found that the first generation, i.e. grandparents usually prefer Indian or Mughalai food. As for the second generation, they do love our traditional cuisine but also like and sometimes even prefer western or continental food pasta, pizzas, lasagne, grilled chicken, or soups. But nowadays, street food is all the rage amongst the young generation! This type of cuisine is not from any one country but is a mixture of several different types of cuisines, cultures, and food types. Among the most famous are Momos, kebabs, sandwiches, shawarmas, dabeli, vada pav, chaat dosas, and many many more. An endless variety is available to satiate the high expectations and wants of today’s youth whilst filling their need for something tasty to eat in the limited time of their busy lives. It is hard to tell whether this food preference is temporary o a more permanent one but it surely is the hype right now.
• Social media is flooded with food bloggers posting videos, blogs, vlogs and articles about the street food of not only various places in India but also the world. Street food is not only a way to fulfill the desire for a fast snack or even a delicious meal, but social media has made it a source of immense entertainment as well. Many of the kids today prefer going to roadside eateries, tapris and companiess for get-togethers with friends and family. Young people working at offices also prefer roadside eateries as a place where they can meet up with their colleagues and discuss official matters. This is because these vendors provide delicious food which is convenient to eat with relatively quicker service and much cheaper rates which makes it a viable option for visiting it dailys. The variety offered by these vendors is immense and truly endless ranging from Chinese to Mughlai. It also provides various fusion foods and a mixture of different tastes combined into one dish, Like Indian Chinese. They offer very interesting fusion combinations like samosa chaat, Chinese bhel, Maggi dosa, pizza,momos ,chocolate moms,chocolate cheese, sandwiches and many more! A lot of times some places become hubs for such street vendors known as ‘khau gallis’ where a lot of vendors are operating together and here the vast choices available are all in one place. These places also become very popular tourist destinations eg.
